Ingredients
  • To marinate Chicken
  • Chicken-1/2 kg
  • Red chilli powder-1 tbsp
  • Turmeric powder-1 tsp
  • Garam masala powder-1 tsp
  • Ginger garlic paste-1 tsp
  • Lemon juice-1/2
  • Required salt
  • For coconut masala
  • Oil-1/2 tbsp
  • Fennel seeds-1 tsp
  • Cumin seeds-1 tsp
  • Cardamom-4
  • Cinnamon-1 inch stick
  • Star anise-1
  • Cloves-4
  • Coriander seeds-2 tbsp
  • Kashmiri dry red chillies-5
  • Grated coconut-1/2 cup
  • For Gravy
  • Oil-2 tbsp
  • Fennel-1 tsp
  • Cumin seeds-1 tsp
  • Green chillies-2
  • Shallots-15
  • Ginger&Garlic-2 tbsp crushed
  • Tomatoes-2
  • Coriander leaves

Chicken curry with roasted spices and coconut

This chicken curry is made with roasted coconut and roasted spices which gives a very good flavor and taste to the curry.This Chicken curry is a very good combination for rice,chappathi,dosa,idlies,idiyappam etc.

Directions

  • Marinate the chicken pieces with Red chilli powder,Turmeric powder,Garam masala powder,ginger garlic paste,lemon juice and required salt.Rest it for some time.

  • Heat oil in a pan and add fennel seeds,cumin seeds,cinnamon ,cardamom,star anise ,cloves and saute well for few minutes.Add Coriander seeds and dry red chillies and fry for few minutes.
  • Add coconut and saute until they become a nice brown color.
  • Allow it to cool completely and grind it to a fine paste.

  • Heat Oil in a large pan,temper it with fennel seeds,cumin seeds and sliced green chillies.
  • Add chopped shallots and saute  until it becomes soft and translucent.

  • Add crushed Ginger and garlic and fry until the raw smell goes.
  • Add sliced tomatoes and saute until they mashed up.

  • Add the marinated chicken pieces and saute for 5 minutes .The chicken will ooze out all water from it.
  • Add the coconut masala and required salt

  • Add enough water and allow to cook until oil floats on top.
  • Garnish it with  chopped coriander leaves.

Notes

  • Using Coconut oil gives authentic taste.
  • Adding kashmiri chilli gives a nice red color to the gravy.
