Ingredients
  • To marinate&Cook Mutton
  • Mutton - 1 kg
  • Ginger garlic paste - 1 1/2 tbsp
  • Turmeric powder - 1 tsp
  • Required salt
  • Water - 3/4 to 1 Cup
  • Ghee - 1 tbsp
    • For Masala paste
  • Cumin seeds -1 tsp
  • Star Anise - 1
  • Cinnamon sticks - 2 small sticks
  • Cloves - 5
  • Green Cardamom - 5
  • Fennel Seeds - 1 tsp
  • Pepper corns - 1 tsp
  • Coriander Seeds - 1 tbsp
  • Dry Red Chilly - 5
  • Kashmiri Dry Chillies - 10
  • Tamarind extract from small lemon size tamarind
  • Garlic pods - 8
    • To roast mutton
  • Ghee - 3 tbsp
  • Required salt
  • Curry leaves
  • Coriander leaves

    Mutton Ghee Roast:This recipe is a blend of tangy and spicy flavors and it taste amazingly delicious.It is one of the easy mutton recipes ever.The freshly ground masala envelopes the juicy mutton pieces a finger licking dish.As the name says,Ghee is the important ingredient as it gives a amazing taste and flavor to the mutton.But if you want to skip ghee,you can go ahead and try it with oil.my family love this recipe a lot.Do try it at your home and share your valuable feedback.Happy Cooking:)

    Directions

    • To Marinate Mutton:In a bowl,Add the cleaned mutton pieces,ginger garlic paste,turmeric powder and required salt and mix well.Allow it to rest for an hour or two.

    • To Cook mutton :Heat a tbsp of ghee in a pressure cooker and Add marinated mutton and saute until the meat releases its own juices .Keep sauting in low flame.Add a cup of water to it  and  cook for 4 to 5 whistles until the meat is done.

    • To prepare masala :Dry roast the spices Cumin seeds,Star anise,Cinnamon sticks,cardamom,cloves,peppercorns,fennel seeds,Coriander seeds,Dry Red Chilli(For spiceness ),Kashmiri dry red chillies ( for good red color,it wont be spicy).

    • Transfer it to a blender .To that add garlic pods,small lemon size tamarind extract and grind to a thick and smooth paste.If you find difficult to grind to a smooth paste,add about 1 or 2 tbsp of water to it and grind.

    • To make Mutton ghee roast:Heat 3 tbsp ghee in a pan,add the ground masala paste and saute well in the ghee in a low flame for a minute or two.

    • Add the cooked mutton and saute well until all the moisture evaporates completely  and the mutton is roasted nicely.Check  salt and add if needed .Finally add some curry leaves and coriander leaves and turn off the heat.

    • Our Delicious Mutton ghee roast is ready to be served.Enjoyyy!!!! :)

    Notes

    • You can do this recipe either as semi gravy or roast  based on your preference
    • The freshly ground masala can be stored in freezer for later use.If you have masala ready in hand,you can quickly prepare this dish
    • Once can substitute ghee with Oil,if they want.But Ghee gives an unique flavor and taste to the dish

      You have some recipes here that look amazing and I can’t wait to cook them. However you need a bit more attention to detail. For example:

      How much salt is “required”?
      How many cinnamon sticks?
      Green or brown cardamom?
      The garlic and tamarind extract are not listed in the ingredients. How much?
      The stock isn’t listed either.
      How long does it take to “saute well”?

      Sorry Michael White :)I have updated it now.
      Stock is not separate thing,when we pressure cook the mutton,we get some stock in that right,i meant that.
