- To Prepare Vegetable Soup
Vegetable soup : This soup is very simple,totally healthy and also taste absolutely delicious.Even Kids love to have this delicious soup.Its made with homemade vegetable stock.You can make the vegetable stock with all left over vegetables.Do try this and share your feedback:)
- To Prepare vegetable Stock : In a large pan, Add broccoli, Cauliflower, Carrots, beans, cabbage, Onion, ginger, garlic pods, bay leaf, pepper corns and salt.Mix well.Cover and simmer it for 1 hr.
- Strain the vegetable stock in a strainer.( You can make this stock with any vegetables of your choice). Keep aside.
- To Prepare Vegetable soup : In a pan,melt a tbsp of butter. Add finely chopped garlic and shallots and saute for 2 mins.
- Add the finely chopped Vegetables( Carrots, beans, Cauliflower and corn) and saute until it is half cooked. Dont over cook the vegetables.
- Add the vegetable stock and boil for a min.
- Add the Corn starch water (Mix 1 tbsp of corn starch in 1/4 cup of water) and cook for few more mins until you get a desired consistency for the soup.
- Add salt and pepper powder and mix well.
- Delicious Veg soup is ready.Serve hot.
