Ingredients
  • Basmathi rice-3 cups
  • water-3 3/4 cups
  • Oil - 4 tbsp
    • Ghee-2 tbsp
    • Bayleaves-3
    • Cinnamon stick(1 inch)-1
    • Cloves-5
    • Cardamom-5
    • Star Anise - 1
    • Fennel seeds - 1/2 tsp
    • Onion-3 sliced thinly
    • Ginger garlic paste-3 tbsp
    • Green chillies-3
    • Coriander leaves
    • Mint leaves
    • Tomatoes -3
    • Turmeric powder-1/2tsp
    • Kashmiri Chilly powder-2 tsp
    • Garam masala powder-1 tsp
    • Carrots-2
    • Beans-10 to 15
    • dried Peas-1/2cup
    • Curd-1/4 cup
    • salt
    • Lemon juice - 1/2

    Directions

    • In a pan,add oil and ghee and temper it with bayleaves,cinnamon stick,cloves,cardamom, star Anise and fennel seeds.
    • Add the sliced Onions,required salt and saute until golden brown.

    • Add the ginger garlic paste and saute until raw smell goes.
    • Add green chillies, mint leaves and chopped coriander leaves and saute for a min or two.

    • Add the tomatoes andsaute until they are mashed completely.
    • Add the spices,turmeric powder, Kashmiri chilli powder and garam masala powder and saute them for a minute.

    • Add the vegetables carrots, green beans and dried green peas(cooked 90 percent),You can also replace with fresh green peas and combine them well in the masalas.
    • Add salt and mix well.
    • Add curd and mix well.Cover them and cook the vegetables until 75 percent done.

     

     

     

     

     

     

    • Add the required water( For 1 cup rice,add 1 1/4 cup of  water) ,lemon juice andsalt.The water should be salty. allow it to boil.

    • Add the soaked basmathi rice(Soak them for minimum 30 mts).
    • Close the lid and  cook until all the water is absorbed in medium heat.Veg pulao

     

     

     

     

     

    • SLowly mix them and cover it tightly and cook in very low heat for 15 mins

    • Simple and tasty Vegetable Pulao is ready to serve.Serve it with raitas.
