Vendakkai sambar/ Bhindi Sambar : Vendakkai / ladies finger sambar is one of my favorite sambar.You can replace ladys finger with other vegetables like drumstick,brinjal, kohlrabi,radish etc.Each vegetable gives a unique flavor to the sambar.I made it with homemade sambar powder which gave extra flavor and taste to the sambar.Please try this at home and share your feedback😊

- To Cook Dal : In a Pressure cook, add soaked toor dal with enough water, tomatoes, garlic pods, turmeric powder and few drops of oil.Pressure cook for 2 whistles or until done.I prefer my dal not to be very mushy.Set aside.
- Soak a small lemon sized tamarind in hot water for 10 minutes and extract the juice.Keep it aside
- To fry Bhindi/ Vendakkai :Clean and pat dry ladies finger with a clean kitchen towel. Cut into 1 inch pieces.
- In a pan, heat oil and add okras and some salt. Saute okras till the color changes slightly browned and the stickiness disappears.Keep it aside.
- To make Sambar: In a pan, heat some oil and temper it with mustard seeds, cumin seeds , fenugreek seeds and dried red chillies.
- Add shallots, green chillies and curry leaves and saute for a min or two.
- Add fried okras and saute for a min
- Add Homemade Sambar powder, Hing/Asafoetida and salt and saute for about a min or two.
- Add the dhal and Tamarind juice and mix well. Close the lid and allow it to to boil for about 5 to 8 mins.
- Finally add a small piece of jaggery(which enchances the taste) and chopped coriander leaves.
- Delicious Vendakkai / Ladys finger sambar is ready. Serve it with idli / dosa or rice.
- Jaggery enhances the taste of sambar
- Adding ghee to sambar adds more taste and flavour to the sambar.
- Adding sambar powder and frying along with veggie gives a nice flavour.
- You can add any vegetable of your choice for this sambar.
- Add extra chilli powder if your sambar powder is less spicy.
